Protessor Kenrick says though Tea is one of those few articles of food which is Sel Dom adulterated it is a matter of common knowledge that Tea according to its Quality varies in Price Between very wide limits. It wat desired that if possible a relation might be traced Between the chemical composition and the Price a Lea. The alleged sophist cations to which Tea is liable Are chiefly As Fol lows 1. Admixture Wilh leaves from plants other than the Tea Plant. 2. The substitution wholly or in part of exhausted leaves or leaves which have been already used in Mak ing Tea and subsequently dried and rolled up again in imitation of genuine Tea. 3. The addition of various Mineral substances such As Sand powdered Quartz magnetic Iron in order to add weight to the Tea. The colouring or facing of Green Tea is by some considered an adulteration but taken per be to can scarcely be regarded As such for the colouring matter being used in Small quantities Only no appreciable weight to the Tea and in fact is said rather to increase the Cost of production. Although there appears to be no doubt at All that Tea is or certainly was at one time very extensively adulterated by the chinese on the other hand there seems to be a difference of opinion As to the extent to which adulteration has been Practised after he then refers to the various forms of adulteration with purest strongest Best. Unhappily the Mosquito s sting is not so irritating to the victim s flesh As its song is to his nerves. Concerning the manner in which this sound is produced Tho naturalist is almost As much in the dark As the most ignorant and thoughtless non scientist. The Ordinary person it is True if questioned on he subject would unhesitatingly answer off Viand that it is made by Tho respiratory or As the vocal music of Man and Many of the lower animals is made. Tho naturalist however would not make this mistake. For whatever produces this sound it appears tolerably certain that it has no necessary connection with Tho breathing apparatus. Botanical characters of the Tea Leaf Are so Well marked that there is no difficulty in distinguishing it from the leaves of other plants. A careful examination of Tho leaves of these examples after treatment with hot water failed to disclose the presence of a single auspicious looking Leaf. Other naturalists equally skilled Aud observant ascribe it to the rapid motions of the Wing Lote the motions of the posers Orth Evi rations of the Thorax caused by Tho contractions of the Muscles of Tho wings. The wings need move rapidly enough to produce a of a fairly robust and pronounced Cliar inter. The variations in chemical composition Between the different varieties of genuine Tea Are unfortunately to great that considerations of Thia kind Are of Little value except when the proportion of exhausted leaves is comparatively Large. One of the Winnipeg samples looked very much As if it were adulterated with exhausted leaves. No systematic examination for facing was made. One of the samples were heavily faced though some of the Japan teas appeared to be slightly coated with colouring matter. The substances used in facing Teaa Are of an entirely harmless Natare and unless employed to conceal the True character of spurious teas very Little can be said against the practice. The Green Schlor of Ordinary Green and Japan teas is due simply to color Green colouring matter found in nearly All not As la the popular belief to the presence of Copper acquired from Hopper vessels dra in the process of preparation. Two samples from Winnipeg merchants must undoubtedly a looked upon As adulterated. One was sent labelled Japan but from its appearance was classed with the gup powder. The analyses of these two samples resembled each other very closely. The total solids extracted by hot water were for Green teas rather Low and soluble Ash 13 much be Low the average. Insoluble Ash m these Sam Les is very much above the general average Seine Only exceeded in one out of the whole 50 samples. This would indicate an undue amount of Mineral impurities but the Quantity is not sufficient to Render it probable that Mineral substances have been added by them selves As an adulteration. The Little spherules of agglutinated dust and dirt made up in Clever imitation of the genuine Leaf balls appear to be the material known to the chinese As a substance described a the sweepings of the warehouses worked up with colouring matter and Rice water. In order to ascertain it possible it these two samples were representative of the Gunpowder sold in Winnipeg 10 additional specimens obtained from retail dealers in win Rupee were examined. One Only out of the 10 resembled at All the samples Onove mentioned. Nearly All these Echo adulterated sold 60 cents per Pound. One was sold at 50 cant.-, and an other was very much cheaper. The Laumon toned was found to be pure. If these spurious Teaa do not contain my imams bub Stan cob it a evident that such adulterated samples As the two whose analyses Are riven Are very poor value for the Money if sold at so or 60 cents per Pound. It is a particular class of Gunpowder known As Are adulterated in this Way. It in Satia factory to find thai Tina majority of Gunpowder Sola in Winnipeg do not belong to this class. It would thus appear that out of the of samples Analysed two or at Moat three were adulterated. Hitherto most statements of chemical constituents of Tea have been derived from chemical analysis of the leaves. This in misleading because in the Ordinary method of preparing Tea a urge part of the aorab.6 material is left with the leaves. Prof. Kaniok therefore adopted the plan of pouring boiling water on the leaves and allowing the infusion to stand for ten minutes. In this Way he is Able to present a report upon the constituents of Tea a it is ordinarily drunk.
