Of making Coffee is Kitchen kind of Coffee and Type of pot two essentials in producing flavor that makes Coffee a Delight. By lbs. Madeline Dat it s justas easy As making a cup of Haven t you heard peo pop say that time and again and yet making a Good cup of Coffee in t the easiest thing in the world if you Are to judge by the results which Are offered you very fre Itsvo things Are necessary if you want a perfect Coffee. They Are. First the right kind of Coffee and second the right kind of Coffee pot there Are a dozen Dif Ferent kinds of these and you must decide which you prefer. Most people Lavor a Percolator and it is perhaps the easiest Way to make Coffee but it you Are going to buy a new Coffee maker give a Little i Carne it to the kind which two sections with the w and the Coffee in the half. J drip o of left. Is fall proof you Cari hardly go wrong with pne of these but you must have Coffee that is very finely ground for you it Over the heat Only until the water has been forced up into the Coffee. Then you set it aside until the Raffee drips Down again you can see Why you need finely ground Coffee for unless you do. You won t get the full strength and flavor. Generally we allow 1 heaping of Coffee for each cup if you like it very Strong allow an Tablespoon or so to the pot. The Coffee into the top part of he maker which is separated from he lower Section by a filter paper or cloth. Measure the required amount of water into the lower bowl and place Over the direct heat until the water has been forced up nto the top then set off the heat until it drips Back through. That is All there is to it. Lift out he. Upper Section containing the grounds and pour directly from the Ower bowl. If ton have a. Percolator to make Percolator Coffee Meas ure the required amount of Coffee 1 heaping Tablespoon per cup into he Basket. Measure the water into he pot and set Over the fire until it begins to percolate. Then lower the beat and allow it to continue cooking for about 10 minutes longer until the Coffee is Clear and Amber coloured As seen through the Glass top. Coffee which has not cooked Lon i enough is Cloudy in appearance. If it Cooks too Long it develops the tannic acid and becomes bitter. There is a third Way of making Coffee which can be very delicious if properly made but which has rather lost favor because so Many people had poor results. I am speaking of what is ordinarily called boiled this is made in an Ordinary Coffee pot.
