Tender and Sweet. Good either cooked or served raw and if your family Don t Tare for carrots try serving them raw As you would cel Ery. They sell at about 7c Bunch or 5c la. Loose. Are still in the luxury class but much better than when they first in. They sell from 25c to 35c each and Are Long slim and almost seedless. Avocados As you like. Now would be a Good time to get acquainted with this fruit for they Are cheaper than i Ever remember seeing them. Select one that is Mellow and Ripe. It will Cost you from 17c Are a few Argentine grapes but they Are High also 40c lb., and i understand that strawberries if we get them will sell at about 30c a pint. Consider your purse when the first Early Spring vege tables come into Market it is a temptation to buy them but if your housekeeping Money is limited you better stick to the ones which carry the lower Price tags. You can still serve an appetizing and Well balanced meal won t throw the budget joint for the week. But s ill pretty Early and they much every scrap of Bone or skin or fat. Put these scraps into a satire pan with 1 cup water and Cook for about 15 minutes. Strain and set aside. Beat the egg with 2 Tablespoons cold water and dip the meat into this. Then Roll in the Fine crumbs and dip again in the egg. Coat once More with the crumbs and let stand for about 1 hour in the refrigerator. The crumbs will not fall off so easily in cooking if the meat is allowed to stand after breading. Brown the meat Well in the hot shortening then lift out and set aside. Add 1 Tablespoon flour to the dripping in the pan and then blend in the Stock made from the veal scraps. Cook this until it is smooth but it should not be. Too thick. If necessary add a Little water to thin it. Lay the breaded veal slices care fully into this sauce and season with Salt Pepper and paprika. Cover closely and simmer slowly for about 30 minutes until the meat is very tender and the Gravy is almost cooked away. Serve dusted generously with paprika. Pineapple and Cream cheese salad. 6 slices pineapple 1 pkg. Soft Cream cheese 2 Tablespoons chopped nuts lettuce method Lay each slice of Pine Apple on a bed of lettuce. Soften the cheese if necessary with a few drops of Cream and form into smal. Balls. Roll each one in the finely chopped nuts and place in the Centre of the pineapple slices. Serve with French dressing or Mayon Naise passed on the Side. Cherry tarts. 1 tin sweetened cherries 1 Tablespoon cornstarch 1 Tablespoon butter Teaspoon Almond extract 1 egg White 3 Tablespoons Fine fruit sugar 6 baked tart shells method Strain the juice from a tin of cherries and add sufficient water to measure 1 cup.
