Cows Are subject to infections of the udder and the milk May be highly dangerous to human beings although the animal May have passed every test and seem to be in Good health. Bacteria flourishes in milk and in Many cases medical investigation has proved that clean from the cow has been infected by people handling it. These people May either be suffering from Dis ease or they May be carriers of Dis ease. Great stress is placed upon the danger of raw milk being infected in this Way. Another and the most common Pere is infection from a sterilized utensils. One practical method the one practical method of kill ing pathogenic organisms in milk is by heating it milk can be sterilized by being heated to Over 230 degrees f. And then sealed hermetically. It can be boiled. Or it can be subjected to various temperatures below the boiling Point. There is no Rule about pasteurization except that the greater the heat the swifter the destruction of bacteria. In England and Wales pasteurization by government regulation consists of heating milk to a tempera Ture of not less than 145 degrees f. Or More than 150 degrees and holding it there for at least 30 min utes. The milk must then be cooler immediately to 55 degrees or less the Only difference in Scotland is that the milk must be cooled to 50 degrees. The Cooling is just As important As the heating. While the heat destroys All pathogenic organisms i leaves a number of non pathogenic organisms alive. The Cooling is necessary to prevent these Organ isms from multiplying and spoiling the milk. Pasteurization May slightly alter the flavor of the milk but this is a Small Price to pay for the safety obtained. Likewise pasteurization it is admitted Lowers the Vitamin c Content of milk. But this criticism is not regarded As valid for the Rea son that raw milk does not contain enough of vitamins c and d to satisfy the needs of a child. Doctors nowadays provide these vitamins in other ways. Everywhere conceded the league experts do not Admi that the nutritive value of pasteurized milk is less than that of raw milk. It is everywhere conceded of course that milk is an essential food for children. A body of Evi Dence has been built up on Thi Point which is unchallengeable.
