Canadian cookery refrigerator easily by Slimmer housewife hot Ullh a salad hot pulls with cold sliced meat hot and a cup of Tea. But always Tot Rolls even at this season of year o perhaps 1 say More at this season of the Vear. They seem to hit the spot gut who to make hot Rolls to Noiske smoother ice Cream mix j itt with milk and Cream Cho Coute when it s warm in the Kitchen and Lovely and Cool outdoors. The answer to that is refrigerator Rolls the kind you mix up on monday and then Mould and slip into the oven just when you Are ready to use them for As Long As they last. If it is Well covered the dough will keep in the refrigerator for several Days or a week and it s no trick at All to make them. Here is my recipe tried and True. Refrigerator Rolls 1 cake soft yeast cup water 1 cup milk 1 Teaspoon Salt cup butter cup sugar 3 eggs flour method soak the yeast in the water which has been heated and cooled lukewarm. Cream the but Ter with the sugar and add the Well i beaten eggs. Add the dissolved i yeast and the milk which has also been scalded and cooled. I mix Well and sift in the Salt and May i make a cake Mother enough flour to make a soft Batter about 2 cups. Beat this very Ard then add enough flour to make a dough that is just stiff enough to handle. The secret of Ood Rolls is to keep the dough soft. Turn out on a floured Board and knead lightly for a few minutes Len place in a greased bowl arid let ise until double in bulk. Now if you want to make Rolls right away you work the dough own and form it into any desired Lape. Place these in a shallow leased pan and again let them Rise p double in bulk. Then bake hem in a Deg. F. Oven for bout 10 to 15 minutes until they re a Golden Brown. If you Don t want to bake them after they Rise once or if you want o bake Only part of them work he dough Down again and put it ack into the bowl. Cover with a loth or with waxed paper and j Len set a lid Over this. Store in the refrigerator until you re ready for them. Then take the Ough out and let it stand at room temperature for about an hour. Would into the shape you wish lace in greased pans and let Rise in double before baking. This is not a very Large recipe. It you can double it if you wish and at this time of year you would a t need an extra yeast cake. Ust the one would be sufficient. Also you could make the recipe Arger and not quite so Rich by using an extra cup of scalded milk and enough More flour to make a Ough. Without adding anything to he other ingredients. Cloverleaf Rolls to make these you Pinch off tiny bits of the dough and form into Falls about the size of marbles. Set free of. Them in greased muffin ans let Rise and then bake in a hot 400 Deg. F.
