Winnipeg Free Press (Newspaper) - July 16, 1938, Winnipeg, Manitoba Canadian cookery sunday by mrs. Madeline Day j from the Many letters we get j conclude that it in t so much cooking As deciding what to Cook that bothers most women. Just to be faced with the kind of heat it 11 de and the vegetables to go with that and then what la have for dessert is a task at any season. But when it s about 90 in the Shade i Don t blame you for Dreadin it. We can t give menus every Day for that would t leave us much space for anything else but once a week do plan a dinner and we plan that Lor sunday. We try la make it one that will Appeal to the average family from both the appetite and the pocketbook Angle. We cd Tose foods that Are season Able and therefore reasonable and we try to make it also a meal that in t too hard on the Cook. Of course tastes vary with individuals. But it s a lot easier to substitute carrots for spinach in a menu that is already planned than it is to sit Dawn and think up the whole meal while the weather stays hot like this we re thinking in terms of Cool meals or at least those which Dor t take hours in a hot Kitchen so if you like that kind too per haps you la try this week s suggestion. Free press sunday dinner chilled Tomato juice mock Chicken patties creamed buttered potatoes new carrots pineapple beet salad fresh Raspberry Shortcake have the Tomato juice thoroughly chilled then serve it in cold glasses with thin wafers. Crisp celery or radishes car. Also accompany this and it s a Good beginning for a warm weather meal. For mock Chicken patties you la s Energy need pork tenderloin. They Are As tender As Chicken and they Only take about 40 minutes to Cook. Mock Chicken patties Ivy ibs. Pork tenderloin Salt Pepper Sage 1 egg cup Fine crumbs shortening i cup Cream preferably sour. Method have the tenderloin that is Cut in pieces about 3 inches Long and then flattened with the Cleaver. Rub each piece with Salt Pepper and Sage. Beat the egg with a Tablespoon of cold water and dip the meat into this then Roll in Fine dry crumbs. Melt the shortening in a heavy Skillet and Brown the patties Well on both sides. Add the Cream Sweet or you can even use evaporated milk if that is More convenient. Cover the pan and Cook Over a very Low heat until the meat is very 4c minutes. Lift to a hot Platter Anc pour Over them the sauce which remains in the pan. Add a very Little hot water to this and let it boil up if there is not enough. For the beet and pineapple salad i like the tiny new beets Best but you can use the others and slice or chop them if you prefer. Pineapple beet salad 12 tiny new beets 6 slices pineapple 1 cup pineapple juice 4 Tablespoons grated a Tierese. Lettuce. Method this salad will serve six people so if you can t get the very tiny beet s you will perhaps need Only one for each serving instead of two. Scrub them and cover with boiling water and Cook until tender. Drain slip the skins and chill. If you Are using the Small ones Quarter each beet or if they Are larger slice them. Place in a Large bowl and add the pineapple which has been Cut in cubes. Pour the pineapple juice Over them and set aside for several hours or Over night. The Jaice from the beets will color the pineapple a Lovely Rich red. When serving Drain Well. Heap into lettuce cups and Sprinkle with grated cheese. Serve with Mayon Naise or boiled dressing. For a Raspberry Shortcake i make a simple sponge cake and bake it in Mary Ann know the kind which have a de pression in the Centre leaving a place to fill with fruit or ice Cream. Raspberry Shortcake 3 eggs 1 cup Fine sugar 3 Tablespoons water 1 cup cake flour 1 Teaspoon baking powder Teaspoon Almond Flavouring raspberries whipped Cream. Method beat the eggs until they Are very Light. Add the sugar gradually and continue to beat until it is dissolved. Add the water and the Flavouring and beat this in. Sift the flour once then measure and sift once More with the baking powder. Cut and fold this gradually into the egg mixture. Mix lightly but make sure that the flour is All folded in thoroughly. Grease the cake pan lightly then flour it and shake out any excess flour. Turn the Batter into this and bake in a slow 325 . Oven for about 35 minutes or until it is Dona. Remove and Cool. Elizabeth Thompson girls who leave unhappy Homes sometimes find they have jumped from the frying pan into the fire but it is rather soon for the writer of this letter to be discouraged. She says dear mrs. Thompson Many tunes i have thought Oil writing you about my problems but put it off thinking everything would be settled. Instead things continued to get worse till i made a break and now i am on my own because i wanted it so. I told Mother i was never coming Back Home As i could make my own living and be much happier away. You May think i was too Hasty As i am Only but i know i was t. I have been wanting to break away for four years. During that time i have suffered All the humiliation that a person can stand. I had not been going around with boys and had not been out Many nights yet i was called the lowest names that any girl could be called. I have stood insults that no Mother should throw at her daughter when she does t deserve them. I am the Only and have three Brothers who also made my life miserable. My father died four years ago and Ever since i be wished Many a time that i could have gone in his place As life has been unbearable for me. I completed All but a month of Grade 10 last year but quit school and went to work. After i had worked four months Mother took sick and asked me to stay Home but after a month she started to treat me mean again. I never got any spending Money and had to earn what i. Needed and then had to give some to my Brothers. I hardly Ever went out and refused All invitations from boys. When they asked me Why i refused i had no excuse As i could t Tell them my Mother would t let me go out. So All the boys stopped asking me because they thought i did t want to go out with them and one refusal is enough for any boy. Now that i am away from Home the boys i used to know Don t ask me because they still think i will refuse. I am really lonesome some times. My girl friends have their special boy friends and though they sometimes ask me to go along i Don t want to spoil their fun by making a third. I stood everything until a month ago. Then i Felt so Low and so near a breakdown that i quarrelled with my Mother packed my clothes and got out. I was called everything she could think of and told not to come Back later with a family when i had no place to go. She had no reason for saying that. I Don t drink or pet and never used to smoke though i started smoking when i left to soothe my nerves and find smoking a Comfort. Before i used to think it was vile boxes for 35c. A Yellowish Plum shading into red called the Climax variety at 20c a Pound. Black Caps or Black raspberries from British Columbia at 15c a Box. These make delicious pies. For a girl to smoke. I have met some boys lately but when they hear i am away from Home they think they can get away with any thing. When they find they can t get anywhere with me they Don t make another Date. Please advise me what to do. Discouraged. Month of being on your own does t prove anything and it is too soon to be Dis appointed. After All the excitement and upheaval of the break you were bound to feel deflated and let Down. Your nerves need More time to get Back to Normal and you should build up your strength by getting plenty of sleep and Good food. Read a lot go to movies and avoid friends who would want to discuss your troubles. Then when your health is consider ways and Means of getting in with a crowd of decent Young people. Any girl your age jiving away from Home is bound to be considered fair game by a certain Type of Man. You will have to be on your guard More than the girl who has parents Back of her. This does t mean that you should bristle with virtue. Be Friendly and natural but avoid smoking excessive make up late hours conspicuous clothes or anything which would provide any excuse for misjudging you. Also make a Point of going to Church and cultivate girls known to be highly respectable. When you meet boys you used to know on the Street let them see you Are prepared to be Friendly. Also join Church clubs and athletic organizations where chances of meeting decent boys Mould be Good. In time you will not be so lonely but Don t expect miracles All of a Sud Den. At least you have peace.
