However by combining them with the currants they jell very easily and it makes a most delicious Jelly. Blueberry currant Jelly 3 cups Blueberry juice 2 cups red currant juice 5 cups sugar method try to get blueberries that Are a Little on the under Ripe Side and be sure to include a few Green currants along with the others. Wash and pick Over the fruit and barely cover each with water. Cook until very tender and until the juice flows freely. Drain separately through a Jelly bag and since the blueberries Darken the Jelly it does t make much differ ence if you squeeze the Jelly bag. With a Clear or lighter coloured Jelly that would make it Cloudy. Measure this juice and Combine in the proportions of 3 cups Blue Berry to. 2 cups currant., return to the stove and boil for 10 min utes. Then add the sugar. Stir until it is dissolved then Cook As fast As possible until a few drops test for Jelly. Remove the scum pour carefully into hot sterile glasses and cover with paraffin. You can also make this Jelly using High Bush Cranberry juice in place of the currants but some people Aren t Lucky enough to live where the cranberries grow plentifully and you can t always find them in the stores. If you can get them try a few glasses made that Way. And if you Don t mind Hunting around a Little in order to get All the fruits the next recipe Calls for you la enjoy it i know. The trouble with it is that so often by the time the choke cherries Are Ripe either the raspberries or the Saskatoon Are Over with. Canadian Jam 1 cup Ripe gooseberries 1 cup choke cherries 3 cups Saskatoon 5 cups raspberries 8 cups sugar method Wash and pick Over the choke cherries and gooseberries and Cook separately in water to barely cover until the fruit is tender.
