Still another very annoying thing about the fish As far As the fishermen were concerned was that quite a Large percentage of mullets were caught along with the fish that could be sold and to add insult to injury they were not allowed to throw the mullets Back into the Lake but had to take any that were caught in the nets All the Way Back to Shore to dump them. All of which resulted in a great Deal of wasted time and Energy for the fishermen. Nothing was done about this problem until one Winter when some enterprising fishermen started freezing some of the mullets that came in with their catch. They packed some of this Frozen fish in 100 Pound sacks and Little by Little the Sale of these sacks of fish increased. Last Winter it was noticed that people were coming from great distances to buy supplies of these Frozen mullets and on investigation it was found that some pounds of mullets had been bought by Cash and carry customers and by mail orders and had gone As far West As Alberta and As far East As port Arthur. Newly built Laboratory. After some preliminary tests were made it was decided that three recipes. Should form the basis o. Their experiments. One of these consisted of Plain Canning with Salt and some Flavouring another of the fish canned in a Tomat sauce and the third of the fish canned in a spiced vinegar sauce. At first the mules were canned in Glass jars but soon cans were found to be More practical. The actual processing of the fish was done in a steam pressure canner. The cans of fish were placed in the canner and processed for 90 minutes at 10 pounds pres sure which Means at a temperature of 240 Deg. F. The steam pressure canner was used because this is considered the Only scientifically Safe method of Canning fish. When the experiments were under Way it was found that the initial sum obtained from the government would not be enough and or. Grant was again commissioned to raise funds which he did time from the Industrial development Board and to the amount of the experiments on mullets however had barely gotten under Way when another waste product was brought to the attention of consisted of what could be done with the Pickerel Cheeks. Pickerel Cheeks Are just that and they Are obtained from Heads of Pickerel taken from fish that is shipped to Market either in the form of fillets or headless Pickerel. In Canning these the same three recipes that were used for the mullets were used along with an additional one using Oil. A rather surprising thing about this product is that it takes about 200 pounds of fish to obtain three pounds of the Pickerel Cheeks. I have tasted both these pro ducts and although my taste runs to the spiced vinegar sauce Ana the Tomato sauce other Peoples tastes May differ.
