Madeline Day the re in t anybody can make soup like aunt Beth. Give her a soup Bone and a handful of trim mings and Shell turn out a meal fit for a King. But she really gets in her Boyt work along about a couple of Days lift i Christmas when sin hns the Turkey carcass to Ork a i h. Some folks Urt tired of the Noble Bird by ibo Lime it s ready for soup but those Are folks that never tasted in the Way aunt Beth makes it. For her justifies the tur key in the first place and you can be devoutly thankful that there s Bones under the meat you taste she Ean do with those Bones. Aunt Ijeh s Turkey soup she picks the carcass pretty a lean. For aunt Beth makes Iolj of other things from any meat there still May be clinging. Bui. Of course there s always a Little. The neck and the tips of the wings and the scraps still remaining on ribs and even the puts it i isl. Then Brough the meat grinder she Breaks the Bones and puts them in a soup Kettle and some Way she can always find enough to make a Turkey souffle for one meal the next Day. I can honestly never decide whether i like the Turkey As it tastes on Christmas Clay when it comes to the table plump and Golden Brown in All its shiny glory As Well As i do the things aunt Beth makes from the sorry remains of i hat Bird after we Veall been served. But i la give you her recipe for making the souffle and perhaps after you have tried it you la be Able to decide for yourself. Turkey souffle 2 cups minced Turkey 4 Tablespoons butter -1 Tablespoons flour 1 a cups milk j eggs Salt Pepper method pick off the Turkey left on the Bones and put it through the food chopper. Even tails of the skin can be if they not hard and dry and the smallest crappiest pieces will be nil right to use in this just so you grind them Fine. A Little of the dressing can go in Here also. You find you re running Short of meat but not too much and it must be finely minced to mix with the meat. With an onion and a cup of chopped i always think i d like a Little celery. Shu adds about cups of finely minced or scraped onion but water and Salt and Pepper to taste and then of split peas. Aunt Beth does t add it so there must be a reason. But she does this goes Over a Low pm my Sim i make a very thick White sauce i is All tiny or anyway for by melting the butter and blending in the flour. Then she adds the gradually to make a smooth seasons 3 or 4 hours until the peas cooked a a pulp and bit of Ihu Shiv in is extruded from i thick sauce which she tin Bonus and the soup has cooked with Salt and Pepper Down in about a quart. Stir the ground Turkey into it inc re s a Lille Gravy or even the sauce and Cool it a Little then seme of the dressing left she puts that in too. Loo of it. Of course but a cup or so. When the soup s done. Takes out thu Bones and strains the soup through a Sieve mashing All the pulp of the vegetables through that she can. She re heals this with a piece of butter the amount of that de pending on How much Turkey fat Here a in tile first place and then she serves it piping hot with Little cubes of Fried bread and 1 Tell you it s Good there s never a lot of Turkey left after Christmas dinner at Beth s for the Way she Cooks it does t tempt you to leave much. But i have stayed Over night there Over again. Add the Well beaten egg Yolks. Beat the egg Whites very stiff and fold them it at the last. Turn into a Well greased baking dish and bake in a moderate 350 Deg. F. Oven for almost an hour. If you re using a baking dish that is not too deep 50 minutes May do the trick but test it with it Silver knife As you would a custard and Don t take it out of the oven util the knife comes out of the Centre perfectly clean. Then hurry it right onto the table for it Falls if you let it stand after you take it from the oven. Serve this with some of the Turkey Gravy that has been heated up and you la enjoy Christmas All can t find out reason by Elizabeth Thompson when a Man grows tired of a girl and wants to break off with her.
