The first of these is one using the bitter oranges. Bitter Orange marmalade 6 bitter oranges 2 Sweet oranges 2 Lemons water sugar method Wash the fruit Well and wipe in dry. Cut the oranges and Lemons into quarters or eighths from Stem to Blossom or Navel end. Cut. Away the Pithy portions at the Centre of the fruit and discard these. Remove the seeds and cover them with water. Then slice the fruit As thinly As possible. Of course if you Are one of those people who like to get things done in a hurry you can put the fruit through the food chopper instead of slicing it. And your family May like the results just As Well. Now measure the sliced or chopped fruit and add times As much water. Mix it Well and set aside overnight. Next Day Drain the water from the seeds and add it to the fruit. Bring the fruit to a boil and keep it boiling uncovered for 1 hour or until the fruit Rind is tender. Remove from the heat and again let stand overnight on the following Day measure the fruit and liquid and measure an equal Quantity of sugar. Heat the sugar in a slow oven with the door slightly ajar that the sugar will not scorch. Meanwhile bring the fruit to a boil then add the heated sugar stirring until this is All Dis solved. Then bring the mixture to a full rolling boil As quickly As pos sible. Keep it rapidly boiling until the Jelly stage is reached. It should not take More than 15 or 20 minutes. Remove from the fire allow it to Cool slightly stirring it once or twice then pour it into hot sterilized jars and cover with a thin layer of paraffin. When this has set add another layer of paraffin and place lids or tight coverings on the jars. The purpose of allowing the mar malade to Cool slightly while stirring it. After it has been removed from the fire is to disperse the particles of Peel throughout the Jelly evenly and to prevent them All rising to the top when you have poured the marmalade into the jars. Now for those of you who prefer a less bitter marmalade Here is one made from Grapefruit Orange and Lemon. Amber marmalade 1 Orange 1 Grapefruit 1 Lemon water sugar method Wash the fruit and wipe it. Dry. Prepare the fruit in the same manner As for the bitter Orange marmalade. Measure the fruit and for each cup of fruit add 2 cups of cold water. Mix the fruit and Meas ured water together Well and set aside for 24 hours. Next Clay bring the fruit mixture to the boiling Point and Cook slowly for 30 minutes. Let stand again for 24 hours and again boil slowly for 30 minutes. Now measure the mixture and for every cud 01 fruit my Asuri 1 cup of sugar and heat this in a slow oven. Bring the fruit to a boil and add the heated sugar stirring until the sugar is thoroughly dissolved. Bring to a full rolling boil As quickly As possible and keep it boiling rapidly until it tests for Jelly. Remove from the fire allow to Cool slightly while stirring it occasionally then pour into sterilized jars and Seal with paraffin As with the first recipe. The last of the recipes i have for you today is one with a Lovely flavor and it is a Little less expensive to make than the first two. Because of the use of part carrots in the ingredients. Carrot Orange marmalade 2 cups cooked mashed carrots 3 cups sugar 2 Large oranges 2 Lemons method grate the Rind from the oranges and Lemons and squeeze out the juice. Combine the fruit juice and grated Rind with the cooked mashed carrots and the sugar. Cook the mixture until thick and Clear stirring constantly to prevent scorching pour into hot sterile jars and Seal immediately with melted paraffin. F i v my Mem mrs.
