Stir and Cook until thick then remove from the heat and add the butter and Vanilla. Cool slightly. Pour into a pastry lined pan and cover with a top crust. Cut a few gashes in the top pastry to allow steam to escape and place in a hot oven 450 Deg. Of for 10 min utes and then reduce the heat to moderate 350 Deg. Of and continue to bake for about 20 minutes longer or until the crust is nicely browned. I like this served hot but you can Cool it before serving if you like. During the Winter months when we have very Little variety in fresh fruits for pies it is a Good prac Tice to vary pie fillings by using different canned fruits occasionally. Winter Raspberry pie 2 cups canned raspberries cup juice cup sugar 1 Tablespoon Quick cooking tapioca is Teaspoon Salt 1 Tablespoon butter method Drain the raspberries Well measure 2 cups and cup of the juice. Combine the rasp berries juice sugar and tapioca and let stand for 15 minutes. Add the Salt to the mixture and pour into a pastry lined pan.
