If you wish to put a Glaze on the Ham you May now score the fat rub with any desired Glaze and place in a 400 to 425 Deg. F. Oven for 15 to 30 minutes or until the Glaze is nicely browned. A Nice Laze can be made by mixing 1 cup Brown sugar with Teaspoon cloves and 1 Teaspoon Mustard. Don t carve the Ham for half an hour after Bak ing the Glaze. If you wish to serve it warm keep it in a warm oven with the door slightly ajar. The size of Ham you buy will of course depend on the occasion for which you wish to use it or the family s appetite for Ham. A 10 to 12 Pound Ham will serve 20 to 25. How Ever for a Small family where you Don t want to have too Many encores a half Ham would serve very Well. Then if you would like to Hax e Ham without any encores at All you can always Cook a slice of Ham. Here is a Nice Way to do it. Baked Ham slice select a Ham slice about 1 Inch one of the tender hams. Stick both sides with whole cloves and Brown in hot melted drippings. Now place the Ham slice in a baking dish and arrange 5 or 6 pineapple rings on top. Ham croquettes 2 cups cooked ground Ham 1 Teaspoon minced onion 2 Tablespoons chopped Green Pepper 4 Tablespoons butter 4 Tablespoons flour 1 cup milk i Salt Teaspoon Pepper Viz Teaspoon paprika method have the Ham finely ground and Combine with the onion and finely chopped Green Pepper make a sauce by melting the butter and stirring in the flour and gradually adding the milk. Cook this stirring constantly until the mixture is thick. Add the seasonings and then mix in the Ham mixture. Set this aside to chill until firm. Now shape the mixture into round cakes and Roll in finely sifted bread crumbs then into an egg mixture made by beating together slightly 1 egg and 1 Tablespoon water. Again dip in bread crumbs and Fry in hot fat 375 Deg. Foj until a delicate Brown in color. Drain on unglazed paper and serve hot.
