Mash the Ether half of the berries and add to them the Susnor and cornstarch. Cook these together in the top part of a i double boiler tent ii thick. Pour i this Over the berries in the shells Chili and serve with sweetened thinned Cream. As n tart filling there is hardly anything that can beat a Combina Tion of fresh sliced strawberries and diced pineapple sweetened to taste and topped Vith whipped Cream however Here is a cooked Strawberry pineapple filling that i think you will like. Strawberry pineapple tarts i u cups diced strawberries. L2 cup sugar. 3 Tablespoons cornstarch. I cup canned pineapple juice. 1 cup diced canned pineapple. Teaspoon Salt. 1 Teaspoon butter. Baked tart shells. Method mix Pic strawberries with the sugar. Make a smooth paste of the cornstarch and a Little of the pineapple juice and add the remaining pineapple juice the diced pineapple and the Salt. Cook the pineapple mixture stirring con stantly until thickened. Add the butter and the sweetened Straw berries. Pour into tart shells and serve warm or cold with sweetened whipped Cream or with a Small scoop of Vanilla ice Cream. The last of these is a filling made with gelatine. Strawberry Chiffon tarts 1 Tablespoon granulated gelatine. Cup cold water. Cup boiling water. Cup sugar. 1 cup crushed strawberries. F-2 pint heavy Cream. Baked tart shells. Method Sprinkle the gelatine Over the it cup cold water and let stand for five minutes. Then dissolve this in the boiling water to which the sugar has been added. Add the crushed strawberries and chill until the mixture begins to thicken then whip the heavy Cream until stiff and fold it into the Gela Tine mixture. Pour into baked tart shells and chill until the filling is set. Serve these either Plain garnished with sweetened whipped Cream. Snapdragons.
