Winnipeg Free Press (Newspaper) - June 29, 1940, Winnipeg, Manitoba Page twelve Winnipeg free press saturday june 29, 1940 of matters concerning the Home culinary clinic stay at Homes May easily get exotic food by june Horne. No doubt you too like nearly everyone else who has read stories at out places outside your Home town and we have cherished a fond desire to visit foreign Section of glamorous cities like London Paris new York Rio d Janeiro or san Francisco and most especially to partake o food in the restaurants for which such districts Are usually renowned. Mrs. Tall keeps annual lunch Date at White House White haired erect mrs. Wil Liam Howard Taft attending the Republican convention in Phila Delphia recalled the Cherry Trees at Washington they were presented to her by the government. Every year when she goes to lunch with Eleanor Roosevelt she takes a drive around the Basin to look at them. Mrs. Taft has been lunching once a year with mrs. Roosevelt a fact that she revealed for the first time. As things Are. However it is Noi very Likely that Many of us Wil have the Opportunity of visiting these spots at least for a Long time to come this being the Case and granted you have the desire for adventuring in exotic foreign food we might Start investigating the possibilities of finding it right Here at Home. And what better place to Start i ask you than our own Chinatown when you go to a chinese restaurant for the first time you will probably spend some time vainly to look intelligent Over the menu and 10 chances to one you will succumb to ordering the Only dish on the menu that is not american chop suey .1 am not gainsaying the fact that you will get the Best american chop suey in a chinese restaurant that you can get that still does t make it a chinese dish. However if you Are really interested in discovering the Culi nary Art As Practised by the chinese by actually tasting of their food there is no better jumping off place than to Start with chop suey. Once you develop a taste for this and in All probability you will be de lighted with it the first time you have you will then Start to become curious about real chinese their delicious pork Chicken and fish dishes. A real chinese meal will Start off with soup but when you order one in a chinese restaurant Here they usually first tempt you companies by the inevitable Bow Rice and another dish known a chinese chop suey. This last con its of a mixture of cooked vege Ables such As celery chinese mushrooms Small slices of Bam Doo stalks onions and dutch peas a Tea pot is placed on the table at the beginning of the meal and s refilled As needed. Chinese Tea s drunk from tiny handle less bowls without Benefit of Cream or Ugar. The dessert course is Al simple consisting of some of canned fruit such As carried Lichen nuts or dragon eyes or chinese preserved y preserved kumquats or some mall cakes made of either Almondi be some of sesame seeds and soy sauce then Coconut cakes and i thav Moo Hinr Tinl a Vii a Uiva a Anil 1 they give you chop Sticks. You pick up the chop Sticks dip them in your individual bowl of soy sauce and then into sesame seeds. This is delicious but not strictly according to chinese Hoyle. I think they Start us off this Way so that we will become More amicable about using chop Sticks. It seems to me that someone said something once about the chinese being Clever people the soup is then brought on in a Tureen and is served by the Host. The kind of soup you will have will in All probability be Bird s nest soup. This is basically a Chicken soup with practically a whole Chicken in it and Bird s nest. When we think of Birds Nesler we usually think of the kind that Robins and sparrows build but then we re not chinese and Here is How the chinese obtain their Birds nests. Bird s nest is a kind of sea Weed that grows around the Strait Settle ments in Southern Asia and certain varieties of Birds gather this sea Weed and build their nests of it. And you can see yourself that 11 would be a lot easier to gather this seaweed by simply collecting Birds nests made of it than it would to have to gather it out of the sea. What did i Tell you about the chinese being Clever the courses that follow this May be any one of a number of dishes. One particularly delicate dish is made with Chicken Fried in pea nut Oil and served with an Almond sauce. Another is pork spareribs done in a Sweet sour sauce. This is a leading favorite with the Chin Ese but i feel that some people would have to cultivate a taste for it because it is certainly unusual. Then you could a Choice of shrimp fritters Fried in a very thin Batter or another fish fritter con Taining a strip of Sturgeon a Atrip of pork and a strip of the White part of a Green onion which is absolutely delicious. These dishes Are of course a. Hope to taste cookies for that is really what they that have a better texture or a More delicate flavor. Some Day i will give you some chinese recipes that you will be Able to make up in your own Home but if you Are not accustomed to this Type of food i would strongly advise you to try it first in a Chin Ese restaurant so that you Tan Dis cover what you like Best.
