The Cut is a shoulder and this is boned and then stuffed with a Ila orsome sausage dressing and then rolled. Potatoes to go with this can easily be baked in the oven along with the roast and this saves time and trouble. As second vegetables we have chosen cabbage and tomatoes. It is a Cream pie with canned fruit lining the pastry under the filling. If sweetening is desired add syrup drained from canned fruit for this. Now Here Are the directions for preparing the Lamb shoulder. Stuffed shoulder Lam 1 boned Lamb shoulder 3 cups toasted bread 2 stalks celery chopped 1 Apple grated .4 Teaspoon thyme or Sage 2 Tablespoons minced onion Pound sausage meat Salt and Pepper method Crumb the bread and Toast the crumbs. Brown the saus age meat in melted fat and separate into Snitil particles. Combine the crumbs celery nipple onion and sausage meat. Acid the thyme and if necessary Salt and Pepper. Stuff the shoulder of Lamb with hot stuffing. Roll the shoulder compactly sew or tie in place Sprinkle with Salt and Pepper. Place fat Side up in an open roast ing pan and Cook at a Low tempera Ture 300 Deg. R for from 40 to 45 minutes a Pound. About hours before the roast is done place peeled potatoes around it. Basle them occasionally with drippings in the pan. Serve the roast hot. Leftover Lamb from this roast May be sliced and heated in sea soned Gravy. It May be soaked in a mild vinegar solution for about 1 hour then dipped in egg and crumbs and Fried. Then of course. The Cream pie filling has the advantage of not requiring very much sugar. Fruit Cream pie 2 cups milk Tablespoons flour i a Tablespoons cornstarch 2 eggs h cup sugar dash of Salt 2 Tablespoons butter .2 Teaspoon Vanilla canned fruit drained baked pie Shell method mix the and Corn starch with i cup cold milk to a thin smooth paste. 7 Hen scald the remaining milk. Beat the egg Yolks add the sugar and Salt. Add a Small of the scalded milk to the flour paste and some to the egg and sugar mixture pour each mix Ture slowly into the remainder of the scalded milk. Stir together to prevent lumping and Cook until thick. Remove from the fire add few fresh. Cover with n meringue made by beating the 2 egg Whites until stiff but not dry and adding 4 Tablespoons sugar. Bake in a moderately slow oven 325 Deg. for from 12 to 15 min utes or until the meringue is nicely browned. D Anjou pears Are Selling at from c to 17c a Pound.
