However if you hav never made this Here is the recipe this is made with pre cooked car rots and when you make it remember to save the water in which Cook the carrots for the recipe Call for some of this liquid. Cream of Carrot soup 2 Tablespoons butter 2 Tablespoons flour 1 Teaspoon Salt Pepper 2 Teaspoons minced onion 2 cups scalded milk 2 cups vegetable Stock 1 cup finely mashed carrots method melt the butter and Sti in the flour then gradually add the scalded milk. Cook Over Low Hea stirring constantly until the sauce thickens. When done this will be a thin White sauce. Add the Salt Pepper and minced onion. Now add the water in which the carrots were cooked. If Salt was used in cooking the carrots use Only half the specified amount in making the White sauce. Then add the finely mashed carrots. Turn into the top part of a double boiler and Cook Over boiling until the soup is thoroughly heated. If you like you can heat it Over a Low heat but this there May be some danger of it scorching.
