The main part of the dessert consists of canned fruit and this is served with a cake that requires no sugar in the making. Here is the menu free press sunday dinner Tomato juice Steak and kidney pie boiled potatoes Root mousse tossed Green salad whole wheat or enriched bread canned fruit Strawberry Jam cake the Choice of Cut in beef is round Steak and the kidneys Are Lamb for the meat pie. Steak and kidney pie 1% ibs. Round Steak Cut in cubes 3 Lamb kidneys 1 sliced onion 1 Tablespoon butter 1 Tablespoon Worcestershire sauce cups boiling water Teaspoon Salt dash of Pepper 2 Tablespoons flour 1% Tablespoons butter method Cut the round Steak in cubes. Soak the Lamb kidneys for a while in cold water then Drain trim and Dice them. Cook the sliced onion in about 1 Tablespoon drip pings until delicately browned. Add 1 Tablespoon butter and the Dice Steak and kidneys. Cook until the meat is quite browned. Re move the meat to a stewing pan to the fat in the pan add 1% cups water and simmer for a few min utes then add the Worcestershire sauce Salt and Pepper then pour Over the meat and cover it tightly Cook the meat gently until it is tender about 1 hour or More Strain off the liquid and thicken with the 2 Tablespoons flour and the 1% Tablespoons butter which have been rubbed together. When the meat is cooled turn i into a pie pan or baking dish and add half the Gravy then cover the meat with Rich pastry crust Anc bake in a moderately hot oven 400 Deg. Of for about 25 to 30 minutes or until the crust is delicate browned. The remaining sauce May be heated and passed with the baked pie. The name of the second vegetable dish Root mousse is possibly do Rived from the fact that a mixture of Root vegetables Are used Anc when cooked they Are mashed and beaten to a Fluffy consistency. Root mousse 3 carrots 3 parsnips medium turnip salted water dash of Pepper butter method pare carrots parsnips an turnip and Cut into coarse pieces Cook in boiling salted water unti All Are tender. Drain and Mas them. Sprinkle with Pepper and idd a Little butter. Then beat until ight and Fluffy. Serve hot. Strawberry Jam cake cup shortening 1 cup Strawberry Jam 2 egg Yolks Teaspoon Almond extract 1% cups cake flour Teaspoon Salt 2 Teaspoons baking powder cup bran cup milk 2 egg Whites method Cream the shortening with cup of Jam. Add the egg Yolks and beat Well. Then add the Almond extract. Sift the flour measure and sift again with the baking powder and Salt. Add the bran and mix Well. Now add the dry ingredients to the Creamer mixture with the remaining Jam and milk which have been combined. Beat the egg Whites until stiff but not dry and fold these into the Batter at the last. Spread the mixture into a greased Square pan and bake in a. Moderate oven 350 Deg from 30 to 40 min utes. Cool and Cut in squares to serve.
