Wipe off the sealing sur face with a clean Damp cloth and Seal tightly immediately. When the contents of the jars Are cold you can invert the jars to test leaks. Any jars showing signs of leakage should have the contents emptied brought to a boil again and they should be packed in fresh hot sterile jars. Store tested jars in a dry Cool place. Next is a similar method but in this the rhubarb is baked covered in the oven until tender then bottled. Experiments have shown that there is less loss of Vitamin c when done by this method. Canned baked rhubarb use freshly gathered rhubarb and Wash it thoroughly. Trim then Cut As desired either in half Inch lengths or lengths to fit the Jart to be used. Place it in a baking dish and cover with a syrup. Make the syrup in the proportion of cup sugar to 1 cup water and. Boil the required amounts of these together for 5 minutes before adding to the rhubarb. Cover the baking dish with a tight fitting lid and bake in a moderate oven 350 Deg. Of for 30 minutes. Then remove from the oven and pack into hot sterilized jars. Wipe off the sealing surface and adjust rubbers Glass tops and screw bands then Seal tightly at once. Next is the method to use when Canning in a hot water Bath. Canned rhubarb hot water Bath method Wash the rhubarb and Cut into h Inch lengths. Pack this into hot sterilized jars. Make a syrup in the proportion of 1 cup sugar to 1 cup water and boil this for 5 minutes. Fill the jars to within Inch from the tops with this syrup and partially Seal that is screw the tops on tightly and then unscrew them a Bare Quarter turn. the jars on a rack in a canner or Wash boiler that contains enough warm water to come up Over the tops of the jars at least 2 inches. Bring the water in the canner to a boil and keep it boiling vigorously for 20 minutes. At the end of that time remove the jars from Linen suit with White eyelet embroidery.
