It is not a difficult task to can spinach and the method used Fox Canning this can be used in can Ning other greens such As kale Swiss Chard and turnip greens. Canning spinach and other greens spinach that is to be canned As stated earlier should be freshly picked. Then it should be thoroughly cleaned. Spinach can be cleaned very satisfactorily under running water but if this is hot possible it May be cleaned by placing it in a Basin of water and plunging it up and Down then lifting it out of this water and placing it in fresh water. This process should go on until there is no Trace of Sand or grit in mixture and lift method Wash the trim and slice it into about Inch lengths. Cut the oranges into quarters or eighths remove the seeds and slice through pulp and skin in paper thin slices. Measure 2 cups of this you will need about 3 medium sized oranges or 2 Large ones to give you the required amount. Mix together the prepared Rhu Barb and sliced Orange then add the sugar and stir the mixture to partially dissolve the sugar. Do not add any water. Place the mix Ture Over a Low fire and stir until the sugar is completely dissolved then heat to the boiling Point and keep cooking at this temperature until the juice will test for Jelly stirring frequently. Place the jars on a rack in a canner or Wash boiler that contains enough warm water to come up Over the tops of the jars at least 2 or 3 inches. Bring the water in the canner to a boil and keep it boiling vigorously for 3 hours. As the water in the canner boils away replace it with vigorously boiling water so that the water remains at least 2 inches Over the tops of the jars All during the processing time. When the processing time is up remove the jars from the canner at once and Seal them tightly immediately. When the jars Are cold invert them to test for leaks. Store tested jars in a Cool dry place. Now that jams Are no longer plentiful a Good Many people Are trying to stretch their allotted can Ning sugar so that they can make a Little of their own Jam.
