Some people have their trials Here too even though this opera Tion May not have any effect on the finished product. Have you Ever had it foam up All Over the stove and have you Ever had it scorch you will nearly always encounter these difficulties if you Don t make a practice of heating the milk in the top part of a double boiler Over hot water. If you do this you will avoid spill overs and scorched milk. The next step consists of com Bining the egg sugar mixture and the milk. The proper procedure is to pour the scalded milk into the slightly beaten egg and sugar mix Ture not vice versa. Lumpiness will result if the eggs and sugar Are poured into the milk.
