Winnipeg Free Press (Newspaper) - August 21, 1948, Winnipeg, Manitoba Culinary clinic Winnipeg free press saturday August 21, 1948 Mustard sauce liked in pickles one pickles that Are made with a Clear pickling syrup Are prob ably Best liked by the majority Oil people. Second in Favori however Are those pickles that Are prepared in a thickened sauce predominantly Flavoured with Mustard. One vegetable alone either in by tune Horne whole or in pieces May appear pickled in Mustard sauce. Then whole and Cut vegetables May be combined. Even chopped relishes May. Be made with this Type of sauce. J. Today we have two recipes for pickles made with Mustard sauce for you. The first of these contains a mixture of vegetables some of which Are left whole and others Are Cut or broken in pieces. The other is for whole onions pickled alone in the sauce. I of course varying degrees of thickness and sweetness May be preferred in the Mustard sauce used with such pickles. The sauces we Are giving with these pickles today Are moderately Sweet and Are fairly thin. Sweet mixed Mustard pickles quart sliced cucumbers 1 quart White pickling onions 2 Heads cauliflower 2 Sweet Green peppers shredded 4 cups sugar 3 to 4 Tablespoons dry Mustard 2 Tablespoons turmeric 4 Tablespoons flour t pint vinegar 1 pint water method Wash and slice firm cucumbers into to v4-Inch slices. Scald Small onions then Drain and Peel them. Trim cauliflower and break the curds into Small Floweres. Halve the Green Pepper remove the seeds and shred the flesh. Place in a Crock and cover with a brine made in the propos of 1 cup Salt to 6 cups water. Let stand in this brine overnight. Next morning Drain and cover with fresh water. Let stand in this for 2 hours then Drain again. Now cover with a weak vinegar solution using half vinegar and half water and allow to stand in this for 15 minutes. Bring to the simmering Point and keep at this temperature until the vegetables Are almost tender. Drain thoroughly and discard the vinegar. Now make a Mustard sauce. First Combine the sugar Mustard turmeric and flour. Mix together the pint of vinegar and the pint of water and use part of the cold mix Ture to blend the dry ingredients in a. Smooth paste then gradually stir in the remainder of the Vine Gar mixture. Place in the top part of a double boiler and Cook Over boiling water until the mix Tui c thickens and there is no raw taste of flour remaining. Add the sauce to the drained hoi vegetables. Mix Well and pour into jars arid sea at Onro. Arid the rest of the vinegar to the paste and heat stirring con stantly until it reaches the boiling Point. Now add the Well drained onions and peppers and let simmer in this for 10 minutes.
