Winnipeg Free Press (Newspaper) - August 28, 1948, Winnipeg, Manitoba Clinic cucumbers sliced for these pickles the by june Horne pickles Are not All made whole or in chunks and v Are not always expected to be Crisp and deep Green coloured very often you will find them thinly.-, sliced not necessarily Crisp or dark in color. A favorite in the latter class is bread and butter pickles. This Pickle is made with a combination of Cucumber and onion slices. The main reason for their popularity is that what they Lack in crispness and attractiveness is made up in flavor. Of course those who must Malie pickles for the family like them too because they Are fairly simple to make. The prepared vegetables Only stand in brine overnight then they Are Given a Short scalding in a weak vinegar solution. They re packed in jars after draining from this and covered with a boiling Sweet syrup. No standing around for Days waiting to finish off these pickles Here s the recipe. Bread and butter pickles 4 quarts sliced cucumbers 1 quart sliced onions 1 cup Salt 9 cups water weak vinegar. 434 cups Brown sugar cups water cups vinegar 1 Teaspoon celery seed 1 Teaspoon Mustard seed 1 Teaspoon turmeric method use fresh Green cucumbers and medium sized onions. Wash the cucumbers and wipe them Well then Peel the onions and Wash these Alao. Cut the cucumbers and onions into coarse slices crosswise. Prepare a brine by dissolving the cup of Salt in the 9 cups of water. Place the cucumbers and onions mixture just to the boiling Point and pour Over the pickles in the jars. Green Corn is plentiful you might like to try a very nicely relish with it. Con relish 6 cups Corn 2 Sweet red peppers 3 Large onions 1 head cabbage 4 Tablespoons Salt 3 cups sugar i Tablespoon Mustard 5 a cups vinegar 234 cups water method Cut Corn from the cob with a Sharp knife and then Mea in separate crocks and cover both with the prepared brine. Lef stand overnight. Next morning Drain the cucumbers and the onions thoroughly. Combine the vegetables and cover a weak vinegar solution made equal parts of vinegar and heat the vegetables in this for about 10 minutes making sure that the liquid never rises above the simmering Point. At the end of this time the vegetables should be tender however care should be taken that they Don t become too Drain this weak vinegar solution off the vegetables and do not use it again. Pack the drained pickles in Glass top jars and cover with the heated pickling syrup and Seal sure it. Remove seeds from Sweet red peppers Peel onions and Quarter the cabbage and remove the Core. Put peppers onions and cab Bage through the food chopper using a medium Blade. Combine the Corn and minced vegetables. Add the Salt sugar mus Tard vinegar and water. Place in a Large Kettle and bring the mix to the boil then lower to simmering temperature and Cook like this for 30 minutes.
