The result is that we turn to some of the less expensive cuts of meats. Such cuts of meat May be pre pared in Many ways that make most appealing dishes. However one dish that is always Welcome which is made with less expensive ruts is a meat Stew. It is this kind of meat dish that we Are going to feature on the main course for our sunday Din Ner this week. Here it consists of a Stew that is presented in the form of a meat pie. Potatoes and onions Are cooked with the meat and other vegetables would be cooked separately to be served with the pie. The dessert is one that is pop ular easy to make and made with rhubarb. Here is the menu. Free press sunday dinner Tomato juice Steak and kidney pie buttered whole new Carrot tossed Green salad Rolls rhubarb Crisp the kidneys in the Stew used in the meat pie add flavor that is Well liked by most people. However if your family is not fond these they May be omitted and More round Steak used in their place. Steak and kidney Fie 3 pounds veal kidneys 1 Pound round Steak 4 Tablespoons 2 cups water 4 Tablespoons hour cup water 1 Tablespoon spicy meat sauce 6 Small potatoes 32 Small onions Teaspoons Salt dash of Pepper method wipe the kidneys with Damp cloth and then soak in slightly salted water for about an hour. Drain and then cover with water and Par boil until tender at a simmering temperature. Skim off any scum that May form on top of he cooking water. Drain thoroughly now Cut both round Steak and he parboiled kidneys into about 1-Inch cubes. Melt the drippings and Brown both meats Well in this. Add the 2 cups water and let come to a boil. Combine the a cup water and the spicy meat sauce and gradually add to the flour blend ing to a smooth paste. Add this to the meat mixture gradually and Cook stirring constantly until the mixture thickens. Now add the potatoes and the onions which have been cooked separately in salted water until tender and drained Well. Season with Salt and Pepper. Place the mixture in a greased casserole or baking dish. Cover with a Rich pastry crust and bake in a moderately hot oven 400 Deg. Of for about 30 minutes. Rhubarb Crisp 8 cups diced rhubarb Viz cup sugar 1 cup flour Teaspoon Salt a cup Brown sugar cup butter a cup shortening method Wash trim and Cut the rhubarb into a Inch lengths. Mix with the White sugar and place in a baking dish. Mix together the flour Salt and Brown sugar. Add the butter and shorten ing and Cut this into the mixture until it is in coarse crumbs Sprinkle on top of the rhubarb. Bake in a moderate oven 375 Deg. Of for about 35 to 40 min utes until the rhubarb is tender and the Crumb top is nicely browned. Serve this As is or with Cream As desired. It is Good either hoi or cold.
