Saturday july 30. 1949 culinary clinic blueberries for dessert by june Horne one of the Nice things about this time of year is that we can indulge in Large bowls of blueberries submerged in Cream or Blueberry pie or any of the other Good things that can be made with these berries. Today then we Are going to give directions for making some of these dishes. Blueberries Are fairly expensive this year As yet. An for this Rea son recipes for desserts calling for any great Quantity of them would not be in favor. Fortunately How Ever there Are Many desserts made with them that require Only a Small amount of blueberries. It is the latter Type of dessert we Are going to Deal with now. The first of these is served in the same Way As a cottage pud Ding would be. Blueberries Here Are mixed right into the Halter. Po1.ka Dot pudding h cup shortening i cud sugar 9 eur if i1. Cups sifted flour 3 Teaspoons baking powder Teaspoon Salt cup milk Teaspoon Lemon extract 1 4 cups blueberries c up sifted flour method Cream the shorten no and gradually Cream in the sugar. Pour into a greased Square pan and bake in a moderate oven 375 for about 30 minutes until the cake is done. Cut this in squares to serve with Plain Cream ice Cream or with a custard or Lemon sauce. The next uses a More Blue berries bul you might consider this a Little More elaborate Type of dessert. It starts off Wilh a cake Batter that is topped with blueberries then a Crumb mixture is sprinkled Over the top and it is Jaked. This is served with a Blue Berry sauce. Blueberry Crumb cake 2 Rups sifted cake flour Teaspoons baking powder Teaspoon suit cup shortening cup sugar Teaspoon Vanilla 27s cup milk 2 cups blueberries cup flour Teaspoon Salt a cup brow. Sii fir 3 Tablespoons butter method sift the cake flour once and i Hen measure and sift again with the baking powder and Cream the shortening and Grad Paliy Cream in the sugar. Add the Vanilla and the egg and beat until Light and Fluffy. Add the sifted dry ingredients alternately with the milk adding a Small amount of each at a time. Pour into a buttered Square pan and cover the Batter with the blueberries. Sift together the i cup flour an i Teaspoon Salt then mix with the Brown sugar. Add the butter and Cut. In until the mixture is in Fine crumbs. Sprinkle this Crumb mix lure Over the blueberries. Bake in a moderate oven 350 Deg. Of for about 50 minutes. Cut in squares while warm and serve with the following sauce. Blueberry sri re. 273 cup a Israr flour i Teaspoon Salt 1 cup water 2 cups blueberries i Tablespoon butter 1 Tablespoon Lemon juice method mix together the sugar flour and Salt. Gradually add the water stirring until smooth. Add the blueberries and Cook the mixture until ii. Is thick ened. Add the butter and the Lem on juice and serve hot Over the Crumb cake.
