Some Carev should be taken in apricots to be used in making such products. Fruit that is slightly under Ripe should make up at least half the required amount and the rest May be fully ripened. The former gives the product a better texture and the Ripe fruit lends color and flavor. Now Here is a recipe for Plain Apricot Jam. This has exceptionally line flavor and is brilliantly col ored. Apricot Jam 4 pounds s pounds sugar Apricot kernels method use some apricots that Are slightly tinged with Green and the rest that Are fully ripened for this. Wash and pick Over the fruit then Cut the apricots in halves to remove the stones and Tut the fruit into Small pieces. Spread the Cut fruit on a shallow Platter and Sprinkle Over it half the sugar and allow to stand Over Cook until the mixture has reached the consistency of a Jam. Pour into hot sterilized jars and Seal with melted paraffin. Coyer with a second coat of paraffin when the first has hardened then cover the jars and store in a Cool dry place. Morning place the apricots in a preserving Kettle and bring to a boil stirring constantly to Dis solve the sugar. Then gradually add the remainder of the sugar. Stir while heating to dissolve this sugar also. Bring to a boil again and Cook stirring frequently until the mix Ture reaches a Jam like consistency. This will take about 45 minutes if the Jam is kept boiling quite rapidly. If desired you May crack some of the stones and remove the Ker Nels. Blanch these in boiling water and remove the skins and add As Many of these As you like to the Jam. The addition of a few Ker Nels lends a Fine flavor to the Jam. However too Many May impart a certain bitterness that you May not like. When the Jam has reached the proper consistency remove it from the fire and pour at once into hot sterilized jars and Over with a coat of melted paraffin. When this hardens add a second coat and then cover the jars with lids or tie paper Over them store in a tool dry place. A Nice combination Jam Jay be Irta de with apricots and raspberries. The berries add not Only flavor but color As Well to the finished pro duct. Raspberry Afri oot Jam 4 pounds cup water i. 2 raspberries 1 cups sugar method Wash the apricots and remove any stems. Then halve them and remove the stones and Cut the fruit into Small pieces. Add the water and the raspberries and Cook slowly for about 20 min i utes. Meanwhile heat the sugar in shallow pan in a slow oven with the door slightly ajar. Add the to the Apricot mixture stil Ling until All the sugar is conv Petely dissolved.
