Thes include Canning with such thing As boric acid Borax or salicylic Acif and it is not Safe to use powder or compounds which contain an of these substances. The safest and most dependable of preserving to de Pend on the application of o preserving by using such things a Salt sugar or some acid foods sue As vinegar or Lemon juice. We Are going to give you on method for preserving vegetal Al belonging to the latter group. Only a Short cooking time i necessary with this and a concentrated solution of Salt and Suga is used As the preservative. Sue things As peas Beans and Corn maj be canned in this Way. This method is a Little More expensive than Canning by the to water Bath method because of the of Salt and sugar needed but the products keep Well and re Tain a considerable amount of their original flavor. If is called the Salt and sugar Canning method. And sugar Canning for Beans pens and Corn 8 cups prepared vegetables 2 cups water cup Salt -1 cup sugar method peas Are prepared by shelling them and then boil ing in a Salt solution using l table spoon Salt to each quart of water Drain Well. Beans Are washed trimmed of Stem and Blossom end and and strings. Then they Are Cut if de sired. Boil these also in salted water for 3 minutes using the same proportion of Salt and water As with the peas. Drain when Corn is. To be done it should first be husked and the silk re moved. Then Cut the kernels from the cods with a Sharp the kernels in a preserving Kettl and just cover with boiling water boil for from 3 to 5 minute s. The Drain Well. Now add the Salt and sugar Given the list of ingredients to the 2 cups water and stir these unti both the sugar and Salt Are Dis solved. Bring to a boil and then and the required amount of prepare vegetables. Again bring to the boil and Kee boiling for 5 minutes. Pack the vegetables into hot sterilized Jar and fill to the tops with the liquid in which they were boiled. Seal the jars tightly at once and when cold store in a Cool dry place. To use vegetables when you wish to use these. Empty them from the jars and brain Well. Cover with cold water bring this to a boil then Drain it off and replace with fresh cold water and bring this to a boil and then Drain this off also.
