August 22, 1952 Page 11 Savory stuffed peppers Star on week end menu by Carol Boss shiny firm Green peppers seen in the markets this week at fairly Low prices brought thoughts of baked peppers to the thought still lingers so we have planned a supper menu for the week end around Savory stuffed Green peppers. Menu Savory stuffed Peppen Tomato sauce Golden cauliflower scalloped potatoes peach freeze United sponge cake Sweet Green peppers on the mar Ket at present Are in excellent condition and their present Low Cost they May be cheaper yet Meres their use. Stuffed peppers Are favourites whether baked or raw. In the uncooked state with a tasty filling they May be served As part of a Large salad or by themselves As a Side salad. Sugges Ted fillings for raw stuffed peppers include seafood salads Chicken or luncheon meat salads potato salad jellied salad mixtures placed in the peppers in liquid state and allowed to stuffings for baked peppers might include hamburger mixtures carefully seasoned sausage meat crab meat with bread crumbs and White sauce for moisture ground leftover meat moistened with Gravy or Tomato soup and seasoned onions cooked Rice and to Matoes Chili con Carne Macaroni and cheese. For this week end we suggest a moist flavorful stuffing of canned corned beef hash enhanced with herbs onions and celery. A Quick and easy sauce made from canned Tomato soup might be served with the Savory stuffed peppers. For Best results Green peppers should be parboiled before filling and baking. Remove slice from top and remove membrane and seeds or slice peppers in half Lengthwise and remove seeds and membrane. Drop peppers into a pot of boiling salted water to cup water and 1v4 tips. Salt for 4 to 6 Pep cover and boil 5 minutes. Drain. Lightly fill peppers with stuffing. Bake 20 to -30 minutes at 350 Deg. F. Peppers will retain their shape while baking if you put them in muffin pans or individual baking cups. Cauliflower is just about at us prime and we suggest it As the second vegetable sprinkled with grated cheese just before serving. Scalloped potatoes Are a Good touch and they can Cook right along with the peppers. Just place them in the oven one half hour before peppers should go in. The dessert we suggest is an icy smooth combination of mashed fresh peaches and Rich whipping Cream the fruit flavor heightened by tart Lemon juice. This should be made about 2 hours before ser ving. Plain United sponge cake is the Sweet for those who want Savory stuffed it porn 3 Small onion chopped cup celery finely chopped 1h tbsp salad Oil or lat 1 can corned beef hash 4 Ige. Firm Green peppers 1 Large Tomato peeled and diced 1 tsp. Mon sodium glutamate k tsp. Pepper Pinch each of Marjoram and Savory saute on fun and celery in fat until onion is soft and Golden. Add hash tomatoes seasonings and herbs and blend Well. Season with it Neces sary. Par boil peppers according to above directions and fill with Savory hash. Bake at 350 Deg. F. For 30 minutes. Serve hot with Tomato sauce. Makes 4 Servings. Peach free if 4 to 5 medium sized peaches juice of one Large Lemon cup sugar i it. Whipping Cream scald peaches in boiling water dip in cold then Peel. Mash with a Fork add Lemon juice and sugar and mix Well. Let stand about 20 minutes. Whip Cream and fold in peaches and mix Well. Freeze in Freezer tray about 2 hours or until firm but not hard.
