August. 29, 1952 Page 15 freshness prime Factor in Sweet Flavoured Corn by Carol Ross Sweet Golden Manitoba Corn is reaching its Peak. Whether you decide to can or freeze some make a Supply of tasty Corn relish or just Cook a big Batch for a delectable family feast of Corn it should be used straight from the Garden while the milk is still Sweet and Runny. Once Corn is picked a change begins to take place in the milk of each Kernel. The sugar in the milk changes to starch and the longer the Corn is kept before processing the tougher and less palatable it becomes. For Best flavor be sure the Corn you use is As fresh As possible. If it spurts milk when the kernels Are pressed you can be sure it is fresh. Cooking a Corn Best results Are obtained if you and quickly in ice water. Pack dry into containers wrap each cob in moisture vapor proof paper sealing or tying ends securely. When it comes to Corn relish you can take your pick of a number of favourites that have been passed along through the years. We offer two one consisting of Corn with Sweet red peppers onions and cab Bage the other a pungent blend of Corn cucumbers tomatoes celery peppers onions plus the usual remove husks and Silks just be spices sugar and vinegar. Pro Cess in a boiling water Bath for 3 hours or in pressure canner at 1c ibs. Pressure allowing 55 min utes for and 65 minutes for quarts. Cool thoroughly in ice cum a Mclish 6 cups Corn kernels 2 Sweet red peppers 3 Jet Rye onions 1 med. Head cabbage tbsp. Salt 3 cups sugar 1 tbsp. Mustard 5 cups vinegar cups water seed peppers Peel onions Core cab. Quarter it. Put these vege tables through food chopper using medium Blade. Combine with Corn and add Salt sugar Mustard vinegar and water. Bring to the boil then lower heat and simmer for 30 minutes. Pour while boiling hot into hot sterilized jars and Seal at once. J Corn Kellih 3 3 cups Corn kernels 2 cups coarsely chopped cucumbers j cups coarsely chopped Ripe tomatoes 2 cups coarsely chopped celery cup chopped Green Pepper Vij cup chopped Sweet red Pepper 2 cups chopped onions tbsp.
