Best Ever nine Day pickles 4 ibs Dill cucumbers fairly Large 1 cup pickling Salt 10 cups boiling water 1 Tablespoon Alum 1 of. Celery seed 20 cups boiling water 4 cups vinegar 2 cups water 3 ibs. White sugar 1 of. Cinnamon Slick 1 of. Allspice Huris Wash cucumbers Well. Combine Salt and 10 cups boiling water pour Over cucumbers and stand 3 Days. Drain off liquid and boil again. Pour Over cucumbers and stand 3 More Days. Peel and chop apples and onions together with the tomatoes. Cut the tops from the peppers and Lake out the seeds and Mem Brane. If you can t get the Sweet peppers use a entail can of Pimien toes for color. Tie the spices in a smal. Bag and add to the vegetables with the Salt sugar and vinegar. Bring to a boil and Cook steadily for 30 minutes until the vegetables Are tender and the mixture fairly thick. Turn into hot sterile jars and Seal. Sweet gherkins the tiny Little cucumbers for this not Over 2 inches Drain cucumbers and wipe length. Even smaller if you can Cut into Inch slices. Get them. V Ash Well and for 4 dissolve the Alum in the 20 cups boiling water and pour Over the cucumbers. Let stand 6 hours then Drain Well. Tie the spices in cheesecloth bag. Combine vinegar. 2 cups water and sugar add spice bag and bring to a boil. Pour Over cucumbers. Pour syrup off daily for 3 Days heat to boil ing and pour Back Over cucumbers adding one cup sugar each Day. Leave spice bag in syrup All the time. On the last Day remove spice bag and bottle the pickles. Green food colouring May be added to syrup on the last Day if desired. Green Tomato relish 20 Large Green tomatoes s medium size onions 2 Sweet peppers 4 cups mild cider vinegar 2vj cups granulated sugar 8 Large apples 4 Teaspoons Salt 1 Teaspoon each of cinnamon cloves allspice deodorant quarts of them use cup of Salt. Sprinkle Salt Over cucumbers cover with boiling water and allow to stand overnight. Next morning Drain Well and pack into jars or crocks. Heat 2 vinegar with 4 table spoons Salt and i cup mixed pickling spice. Pour this Over the cucumbers and add 1 cup sugar. Cover the Crock and set aside until next Day then add 1 More cup sugar. Continue adding 1 cup sugar each Day until 6 have been added. Then set the pickles in a Cool place for a few weeks to Ripen before using them. These May be sealed but it is not necessary they should however be covered tightly. Quick pickled onions Peel onions and place in Crock. Cover with a brine made from 5 Tablespoons Salt 1 scant Tea spoon and 1 quart water. Leave in brine overnight. Next morning Drain and pack in sterile jars. Cover with cold vinegar syrup. Seal. Vinegar syrup 1 Teaspoon Salt 1 cup water 2 Tablespoons mixed pickling spice cup sugar 3 cups White vinegar boil All together for 10 minutes and Cool before adding to onions. An a Yuening. Brida.
