Be sure you get Concord and not the Ordinary Blue grapes which do not jell so Well. Grape Jelly is a delicious accompaniment for wild Duck fowl pork and Lamb and 5s simple to make if directions Are carefully followed. Do not overcook the grapes this destroys the jelling qualities. They should be cooked until just tender not Mushy. Whether to add water is a debatable Point. If the grapes Are plump and Juicy it is not necessary to add water for juice extraction. If they Are inclined to be dry a Jit lie water May be necessary. Never try to make too Large a Batch at one time. For Best re sults use Only 4 or 5 cups of juice at one time. During the time the juice and sugar Are cooking to jelling . To reduce the possibility cry Hals forming allow the extracted juice to stand Lor 3 to 4 hours or overnight in a Cool place. In the morning carefully pour the juice off from the sediment which will nettle in hot Tom of pan. By May be Eithe or spiced. If making Plain Jelly this stage is reached Start test ing for Jelly stage. When this stage is readied remove from heat. Pour the Jelly immediately into hot sterile sealers filling to within 1 Inch of the top. Cover with is Inch melted paraffin. Add a further Inch layer As soon As the first one has set. Cover and store in a Cool dry dark place. Spiced grape Jelly 6 ibs. Grapes 2 Teaspoons cinnamon sugar 1 Tablespoon whole cloves 1 cup vinegar and Stem grapes. Place in preserving Kettle with vinegar and spices. Cook about 10 min utes until soft. Drain through moistened Jelly bag. Let juice stand for 3 to 4 hours then Drain off leaving sediment which has settled in Bottom. Measure 6 cups of juice into preserving Kettle. Bring to rapid boil then add 4u cups sugar. The sugar used should in the proportion of i cup sugar the Jelly May be either Plain to a cup stir to dissolve in sugar and bring to full rolling you have a Choice of the usual method without added pectin or the Short boil method in which pectin is added. Spiced grape Jelly is preferable for use with wild Duck and Venison. Concord grape Jelly pick Over the grapes carefully choosing Only those which Are firm. Wash Well and remove stems. Place a layer of grapes in Bottom of preserving Kettle and crush using either1 the Back of a wooden spoon or a potato Masher. Add remaining grapes. Bring very slowly to boil and Cook Only Sintil grapes Are tender. This will take about 10 minutes. Turn into Jelly bag and allow to drip overnight. Pour juice. The pulp which is 3eft in the bag May be used for making grape butter. Measure out 4 cups of juice. Bring to a boil then boil hard Ifor 10 minutes. Add sugar and stir until dissolved.
