Winnipeg free press saturday june 16, 196s vary the menu for Barbecue Cook outs by Norah Cherry warm weather has brought out the portable barbecues. It s Cook out tune again. What matter if we can t afford expensive steaks. There Are plenty of cheaper cuts of meat that taste wonderful cooked Over charcoal. And let s be show offs when we preside Over the Grill and try something new each time. The food that gets cooked on the Barbecue can be As elaborate or As simple As the chef wishes. Nine times out of 10 the Barbecue is presided Over by father who usually has definite ideas about food preparation even if they May be a Little unorthodox. Let him have his Way and he will produce palatable foods that satisfy hungry appetites and can even Lay claim to gourmet Fame. Outdoor cookery is a natural for men. When they go off on those entirely masculine expeditions to Hunt and fish they have to fend for themselves. They take Pride in cooking their catch of fish and in the excellence of their Camp Coffee. Spread cheese mixture on both sides of buns. Place patties Between buns. Yield 6 Servings All purpose Barbecue sauce cup wine vinegar cup fresh Lemon juice cup salad Oil 1 Teaspoon soy sauce it Teaspoon Salt 6 Teaspoon Black Pepper place ingredients in Jar cover. Charcoal briquet Are beat because they give off uniform heat. The fire bowl should have a. Gravel base or be lined with heavy duty alumni num foil. Some of the newer Harbe cuts have perforations on the Metal bowl which Al lows the burning charcoal to breathe thus eliminating the gravel base. The foil How Ever reflects the heat and makes for fuel Economy. To Light the briquet we use an electric starter in preference to lighter starters or chips and paper. The briquet Are put on top of the electric Rod and in just seven minutes Grey Ash appears on the briquet nearest the Rod. Remove starter then. Add More briquet and in about 15 to 20 minutes you will have a hot bed of coals ready for Grill or spit barbecuing. Remove the Grey Ash from the briquet before starting to bar Becue. 1c you use starters other than the electric one you will have to allow 45 minutes after ignition before the coals Are hot enough for cooking. Teaspoon Pepper roast 4 in. Semi Boneless Blade beef roast i Teaspoon salts Teaspoon Pepper 2 Tablespoons salad Oil Large piece heavy duty foil 4 carrots 3 potatoes to make sauce Combine cat sup cheese melted butter diced onion vinegar Worcestershire and seasonings. Set aside while Browning pot roast. To prepare roast wipe with Damp cloth. Rub each Side with Salt and Pepper. Brush on salad Oil. Place on Grill Over hot coals. Brown on All sides. Cut frankfurters into Inch lengths. Place meat am Franks in shallow pan. Pour on marinating sauce. Marinate in refrigerator 2 hours. Drain off sauce. Cut tomatoes in quarters alternate pieces of Frankfurter Tomato pineapple whole onions and mushrooms on eight 12-Inch skewers. Place on Grill 4 to 5 inches above coals.
