Apparently they Are favourites with the readers because we get Many Calls asking when they will reappear in print. Do clip them for later use use Only firm fresh vegetables and fruits for pickles. Fruits Are Best when slightly under Ripe. Always refrigerate vegetables if they cannot be preserved As soon As picked or purchased holding cucumbers for even a few hours at room temperature could result in hollow centred pickles. Be cautious rather than Gen Erous with spices. A dark color and sometimes a slightly bitter flavor can result from too much spice. Whole spices tied loosely in a cheesecloth bag Are prefer Able to ground spices. The bag is removed before the pickles Are bottled. English Apple Chutney z ibs. White onions 4 Tablespoons pickling Salt 6 cups cold water 4 ibs. Tart Green apples 2 ibs seedless raisins 2k cups cider vinegar 1 head celery 4 Sweet red peppers 5 cups sugar 2 Tablespoons dry Mustard 2 Teaspoons Salt 1 Teaspoon turmeric 1 quart cider vinegar pare onions make brine of pickling Salt and water. Pour Over whole onions let stand Over night. Pare apples and put through food chopper add washed raisins and 2vz cups vinegar. Let stand overnight in Large pre serving Kettle. Stir in remaining ingredients in order listed. Cook hours or until thickened stirring occasionally. Pour into sterilized jars Seal. Yield four pints. Pickled beets so Small whole beets 4 cups vinegar 2 cups water cups sugar i Tablespoons pickling Salt 3 Tablespoons whole mixed pickling spice select Small Young beets. Leave two inches Stem and roots on beets. Cook until just tender. Dip in cold water remove skins. Pack in clean jars. Boil vinegar water sugar Salt and spices tied in bag five minutes. Re move spice bag. Pour Over beets to completely cover. Seal. Store in Cool dry place. Yield four pints. Pickled onions 4 quarts whole pickling onions 16 cups boiling water 1 cup pickling Salt 6 cups White vinegar 2 cups water 3 cups sugar i cup mixed pickling spice cover onions with boiling Waier. Let stand three minutes. Drain. Cover with cold water. Peel off skins. Make brine of boiling water and pickling Salt. Pour Over onions let stand Over night. Place in colander to Drain rinse thoroughly. Heat vinegar water sugar and spice tied in bag to boiling Point. Boil five minutes. Remove spice bag. Add onions bring to boiling Point Only. Ladle into clean jars cover with boiling syrup. Seal at once. Yield seven or eight pints. Pepper relish 18 Green peppers 6 Sweet red peppers 12 onions boiling water cold water 4 cups White vinegar .3 cups sugar 3 Tablespoons pickling Salt Teaspoons Mustard seed Teaspoons celery seed Wash peppers remove seeds and Core. Pare onions. Put vege tables through Fine Blade of food chopper. Cover with boiling water Drain. Place in preserving Kettle. Cover with cold Vater bring to boiling Point. Drain. Add remaining ingredients in or Der listed. Cook 10 minutes. Ladle into sterilized pint jars. Seal tightly. Yield six pints.
