Add egg mixture to risen beat in two cups Lour. Blend in remaining flour if necessary blending by band using rotating motion. Turn out on lightly floured Board knead until smooth and elastic about 10 minutes. Shape into smooth All. Place in Large greased bowl rotate dough to grease surface. Coyer bowl let stand in warm place free from draft until doubled in bulk. Punch Down dough. Remove about one third of dough. Shape remaining dough into two round loaves. Shape reserved dough into four Rolls about one Inch wide. Press Rolls on top of loaves to form Cross. Trim and uck ends underneath. Shape trimmed dough into rosettes and doves. Arrange around Cross cover loaves let Rise in warm place until doubled in bulk. Preheat oven to 400 Deg. F. Beat one egg and Tablespoon water until blended Brush on top of loaves. Bake 15 minutes. Reduce oven beat to 350 Deg. F. Bake 35 to 45 minutes longer. Yield two loaves. Yeast raised Simonel cake cup milk cup lukewarm water 1 Teaspoon sugar 1 package Active dry yeast 2 eggs cup sugar cup butter 2 cups sifted All purpose floor Teaspoon Salt is Teaspoon Nutmeg Teaspoon Anise seed cup slivered glazed Lemon Peel cup currants 1 cup Almond paste confectioner s frosting 12 blanched almonds scald milk Cool to lukewarm. While milk cools pour Luke warm water into bowl. Add Teaspoon sugar stir until Dis solved. Sprinkle with yeast let stand 10 minutes stir to blend. Add yeast mixture to milk. Beat eggs until thick and Lenion Dolored. Add sugar beat until combined. Melt butter add to egg mixture. Stir in milk and yeast. Sift then measure flour resist with Salt and Nutmeg. Stir into yeast mixture. Cover let Rise in warm place until doubled in bulk. Stir Down cake. Blend in Anise Peel and washed cur rants. Turn Batter into eight by eight by three Inch lightly oiled round pan. Cover let Rise in warm place until doubled in bulk. Preheat oven to 350 Deg. F. Bake 60 to 70 minutes or until cake leaves Side of pan and has hollow sound when tapped. Leave in pan 10 minutes. Remove from pan to wire rack. When Cool Roll out. Almond paste into Circle same size As top of cake. Brush top of cake with frosting. Set Almond paste Over frosting. Brush with remaining frosting. Arrange 12 almonds on frosting. Yield one cake.
