If a diabetic happens to be among the guests you entertain during the Holiday season plan to include foods which meet with his or her needs. The tested recipes in this column developed by the Canadian diabetic association Toronto Are sure to please non restricted guests As Well. Grapefruit Cranberry relish 2 cups fresh cranberries 2 to 3 Tablespoons artificial liquid sweetener 1 Grapefruit peeled and sectioned chop cranberries in food chopper or blender. Add Swee Tener mix Well. Dice grape fruit mix Well with Cranberry mixture. Chill. Yield about three cups. Exchange one Tablespoon for one calorie poor food list b. Mulled Cranberry Apple punch 4 cups artificially sweetened Cranberry juice 4 cups Apple juice 1-to 3-Inch cinnamon stick 4 whole cloves 1 Orange sliced into eight sections Combine Cranberry juice Apple juice spices which have been tied in cheesecloth bag and Orange slices in a Kettle. Bring to boil. Remove bag of spices. Serve hot in mugs. Yield eight cups. Exchange a half cup of punch is equal to one fruit Exchange. Holiday salad 2 mandarin oranges peeled sectioned and seeded 1% cups shredded White cab Bage cups shredded red cab Bage 1 Tablespoon freshly chopped Parsley 2 drops artificial sweetener 2 Tablespoons Mayonnaise 1 to 2 Tablespoons vinegar or Lemon juice place Orange sections and Parsley on top of cabbage. Combine sweetener Mayon Naise and vinegar or Lemon juice dribble Over salad. At serving time toss lightly. Yield six Servings. Exchange one serving of salad May be exchanged for one vegetable Exchange list 2, group a one fat Exchange and one calorie poor food list b. Bavarian egg nog 2 envelopes us Flavoured Gelatin cup milk 2 cups egg nog i Teaspoon Salt Tablespoon rum Flavouring 2 egg Whites 1 Teaspoon artificial liquid sweetener cup whipping Cream cup chopped walnuts strawberries or raspberries soften Gelatin in cold milk. Add one cup egg nog heat Over hot water until Gelatin melts. Add remaining egg nog Salt and rum Flavouring. Cool until mixture begins to thicken. Beat egg Whites until stiff whip Cream and fold both into partially thickened mixture. Pour into Mold. Set until firm about four or five hours. Untold and top each serving with two Tablespoons of thawed artificially sweetened strawberries or raspberries. Yield six Servings.
