Herman for people who be never heard of him a Distant Cousin of that pm time favorite sourdough starter. The main difference is that Herman and therefore More versatile forming the basis for endless Home baked delights including breads cakes cookies muffins Coffee cakes bagels pancakes and even pizza crust. In fact some homemakers Are her Alding Herman As the undisputed new Star of the baking world. Kitchen table business his popularity is such that he s become the heart of a thriving Kitchen table business in Minnesota where an enterprising Mother and daughter have risen to the occasion so to speak. Harlene Hayer Watland and Dawn Watland Johanson decided to go into business this past Winter after they realized there was tremendous inter est in the starter. They re not in the business of Supply ing the starter anyone can make it right at Home. Recipe follows rather they develop and test recipes which make use of the special starter their aim being to put Herman to work at every meal. In a Telephone interview from her Home in North Branch minn., Watland said Herman s origins Are unknown. She got the recipe from her Mother who got it from someone else who probably got it from someone else. Nor does she know How the name came about. I be asked All kinds of food she said but no one seems to All she knows is that the recipes Are popular so much so she s recruited several neighbors to lick Stamps and help keep up with the thousands of requests for recipes. To Watland s Surprise much of that interest is expressed by Winni Eggers who she suspects Are responding to a tiny advertisement she placed in a Minneapolis newspaper. Watland said each recipe is tested at least three times before it is included in a monthly newsletter. It costs u. S. A month and usually includes eight or 10 new recipes she said the Sweet version of sour dough starter is different from the traditional kind in several respects. It Herman can work at every meal. Herman starts us on the Road to Coffee cake breads and even pizza crust. Produces a closer texture in baked goods and it does t have the distinctive sour taste of traditional sour dough. And should the love affair with her Man Cool somewhat he May always be Frozen. When the urge for him returns full Force she said he May be thawed temperature and away he goes again. The old sourdough must be fed and used regularly or it will die. Both Watland and Johanson Are self taught when it comes to baking but i also had the Good Fortune of having a grandmother and a Mother who were both Superb Watland said. Here is the Basic recipe for the Sweet starter plus several of Watland and Johanson s recipes that Are Apt to get you hooked on Herman starter 2 cups All purpose White flour 2 cups milk 1 cup sugar cup warm water 2 Tablespoons or 2 packages Active dry yeast Sprinkle 1 Tablespoon of sugar Over the warm water. Sprinkle yeast Over top and let stand in warm place about 10 minutes. Mix milk remaining sugar flour and yeast mixture in a plastic or Glass Container. Watland says a Plas tic ice Cream bucket works beautifully stir using Only a wooden spoon or Fork because Metal objects retard the starter s natural growth. Leave cover Loose Glass plate Over top of Container so the mixture can breathe. The starter doubles or even triples at times of vigorous rising. Let sit overnight in a warm place. Next Day cover and refrigerate. Feeding the starter the original recipe said to stir the starter every Day but Watland said it s not necessary to do it that often. She s found Herman can survive a Long weekend quite nicely. For longer vacations however it s Best to pop him in the Freezer. The starter is ready for use on the fifth Day for Coffee cakes or chocolate cake but if used As the Only Leavening agent in bread Watland said it would be Best to wait until the 10th Day. To feed the starter after removing the required amount add 1 cup All purpose White flour 1 cup milk and cup sugar. Stir Well and return to refrigerator with a Loose cover. On the 10th Day you should have enough starter to bake any one of the recipes plus starting the process of feeding it once again with 2 cups All purpose White flour 2 cups milk and 1 cup sugar. Watland said that after the 10th Day she and her daughter began using the starter almost daily making All their breads cakes and pancakes with it. As Long As we remember to feed him approximately every five Days he sur Vives very Well. If you Are not using him often just add a Teaspoon of sugar to feed the yeast on every fifth Day and continue As Long As Herman Peanut butter brownies y2 cup butter or Margarine 1 Tablespoon lard cups sugar v4 Teaspoon Salt cup Light Corn syrup lean meat prices signal beef Relief lower beef prices for Chuck rib and hips cuts As Well As ground beef should provide Consumers with some Relief at the meat counter this week. Most major supermarkets in Winni Peg Are featuring these cuts this week and there Are some Good buys regu Lar ground beef in particular especially if you shop at mall foods where it s Down to a Pound if bought in a 10-Pound bulk order otherwise it s a Pound still a Good it s also featured at cantors for a Pound a Pound at Dominion and lob Laws. Blade roasts Are also Down in a Pound at Safeway a Pound at City meat at Wiebes. And a Pound at cantors. Mall foods has the lowest Price for Chuck Steak at a Pound. It s also featured at Wiebes for a Pound pay fair Iga and cantors have it on for a Pound while at Safeway it s advertised for a Pound. Cross rib roasts Are another Good buy this week on for a Pound at mall foods to a High of at Penners and Iga. Cantors has the Best Price for round Steak at a Pound. It s at Wiebes at super Valu at family fare and at Bay Mart. Also Worth mentioning is Rump or Bottom round roast for a Pound at family fare. Many of these less tender cuts Are Best buys Alice Krueger suitable for barbecuing if marinated for several hours before cooking. Many people Are apparently doing just that judging from the number of Calls this week requesting marinade recipes. For those who asked following is a Basic marinade for about two pounds of meat. In a Jar Combine cup Oil cup vinegar or Lemon juice it cup chopped onion 1 garlic Clove 1 Teaspoon Salt it Teaspoon Pepper y2 Teaspoon dry Mustard 2 Tablespoons Worcestershire sauce and Teaspoon oregano. Pour Over meat and allow to stand at least one hour or refrigerate overnight. Or Here s a Good Tenderizer to turn round Steak into tasty kabobs. Beef kabobs Waikiki 1 pounds round Steak Teaspoons dry Mustard Teaspoon chopped fresh Ginger Root y8 Teaspoon ground Pepper 1 garlic Clove crushed 6 Tablespoons soy sauce 3 Tablespoons Lemon juice 3 Tablespoons Oil Cherry tomatoes Green Pepper Cut in 1-Inch chunks whole fresh mushrooms partially freeze round Steak to ease cutting strips. Slice into strips 4-Inch thick and place in shallow pan or dish. Combine Mustard Ginger Root Pepper and crushed garlic. Mix soy sauce Lemon juice and Oil and add this mix Ture to seasonings. Mix Well. Pour marinade Over Steak strips and allow meat to marinate at least 4 hours. Thread marinated Steak strips onto Metal skewers accordian style alternating Cherry tomatoes Green Pepper chunks or whole mushrooms Between every second fold. Brush with Marin Ade and place on Grill about 4 inches from heat. Brush with marinade during cooking time about four minutes on each Side. Makes 4 to 6 Servings. Pork Boneless pork loins Are a Pound at cantors at pay fair and a Pound at City meat. Safeway mean while is advertising Boneless leg roasts any Cut for a Pound. Loin chops Are featured at super Valu and lob Laws for a Pound for Centre Cut. Super Valu is also advertising smoked hams partly skinned ready to eat for 99 cents a Pound. At pay fair it s pork butt roast for a Pound butt steaks for a Pound. Fruits Bing cherries Are a Little More reasonably priced at seme stores than last week 89 cents a Pound at cantors 98 cents at Wiebes 99 cents at Penners super Valu Safeway and lob Laws at pay fair and a Pound at mall foods. California peaches Are beginning to show up at most produce counters. Lowest Price is 65 cents a Pound at Iga. They re 68 cents a Pound at Wiebes Dominion and lob Laws 69 cents a family fare 75 at cantors and 79 at pay fair and Penners. Miscellaneous lob Laws is advertising reconstituted Orange juice sweetened or unsweetened in the 1.36-litre tin for 69 cents with a newspaper Coupon. Watch also for Light chunk tuna in the 184-Gram tin for 97 cents at super Valu the one litre size of Crisco vegetable Oil for with a Coupon at family fare cheese slices 500-Gram package for with a Coupon also at family fare process cheese spread in the 500 Gram Jar for at pay fair the one Pound package of Nabob Coffee for at super Valu Miracle whip 500-Gram Jar for at family fare. 1 cup creamy or Chunky Peanut butter 1 Teaspoon Vanilla 3 eggs cup warm water 1 cup Herman 1% cup cake flour Cream together the butter lard sugar Salt and com syrup. Add Peanut butter and Vanilla and beat. Beat eggs with warm water and add to mixture. Add Herman and beat. Mix in flour Only until ingredients Are blended. Pour into 9-by-13-Inch greased pan and bake i oven for 25 to 30 minutes. Cool and ice. Freezes Well. Herman poppy seed Pound cake 1 cup Herman starter 2 ounces poppy seeds 1 cup butter or Margarine iy4 cups sugar iy2 cups Brown sugar y2 Teaspoon Salt y3 cup sour Cream 2 Teaspoons Vanilla 6 eggs 3 cups All purpose White flour sifted Teaspoon baking soda remove 1 cup starter from refrigerator 3 to 4 hours ahead of time and add poppy seeds. Let sit at room tempera Ture. Cream together butter sugar Salt sour Cream and Vanilla until very Fluffy. Add eggs 1 at a time beating Well after each addition. Combine flour and soda. Add alternately with starter beginning and ending with starter. Pour into greased and floured 10-Inch tube pan. Bake in oven for 1 hour 30 minutes or until cake tests done. Cool 10 minutes in pan remove to rack and Cool. 1 cup sugar cup Oil 2 eggs 54 Teaspoon Salt Teaspoons cinnamon 2 cups sourdough starter 2 cups flour Teaspoon soda 2 Teaspoons baking powder Topping 1 cup Brown sugar 1 Tablespoon flour Teaspoon cinnamon cup butter Cream together sugar Oil and eggs. Add Salt and cinnamon. Add Herman. Sift flour soda and baking powder add to Batter. Pour into greased 9-by-13 Inch pan. Combine Topping ingredients and crumble Over Batter. Bake in oven for 25 to 30 minutes. Serve warm with ice Cream or whipped Cream. Freezes Herman chocolate cookies 1 cup shortening 2 cups Brown sugar 4 eggs 1 cup Herman 3 cups flour 1 Teaspoon soda 1 Teaspoon baking powder Teaspoon Salt 4 Tablespoons Cocoa 2 Teaspoons Vanilla nuts if desired Cream shortening and sugar. Add eggs and mix Well. Mix in Herman. Sift dry ingredients and add to first mix Ture. Add Vanilla. Stir in nuts if desired. Drop by Teaspoon on greased cookie Sheet. Bake at for it minutes. May be iced chocolate icing when Herman applesauce cake iy2 cups sugar cups shortening 2 eggs 1 cup Herman iy2 cups applesauce 1% cups All purpose White flour Teaspoon cinnamon Teaspoon allspice Teaspoon cloves Teaspoon soda iy2 Teaspoons Salt 1 Teaspoon baking powder 1 cup walnuts 1 cup raisins Teaspoon rum Flavouring optional Cream sugar and shortening. Add eggs and mix Well. Add Herman and applesauce. Beat on High Speed for 2 minutes. Sift together flour cinnamon allspice cloves soda Salt and baking powder. Add to first mixture and beat Well. Stir in walnuts raisins and rum Flavouring. Pour into greased and floured tube pan. Bake in 350 f for 1 hour 15 minutes. Cool 10 minutes before removing from pan. Gazpacho makes a great beginning there s nothing like a fresh and icy Gazpacho to begin a meal. Somehow the cold soup makes your hot entree More inviting. Gazpacho Isabel 1 Green Pepper Oil 3 Large tomatoes peeled seeded and chopped 4 Green onions chopped 1 Cucumber peeled and Cut up 4 sprigs Parsley leaves Only 1 cup cocktail vegetable juice or Tomato juice Vij cup Olive Oil 1 Tablespoon White vinegar Teaspoon minced garlic Teaspoon ground cumin Salt Pepper Tabasco Frozen Tomato cubes recipe follows garlic Croutons recipe follows finely diced Cucumber i chopped Green onions Fry Green Pepper in Oil until Peel blisters. Drain and place in cold water. Remove from water Peel and Cut in chunks. Put Green Pepper i blender Container. Add onions Cucumber Parsley cocktail vegetable juice Olive Oil vinegar garlic cumin Salt Pepper and Tabasco to taste. Pro Cess till finely chopped. Turn into bowl chill. Just before serving place 2 fro zen Tomato cubes in each bowl. Serve garlic Croutons diced Cucumber and chopped Green onions separately to be added As desired. Makes 6 Servings. Frozen Tomato cubes fill ice cube tray with cocktail vegetable juice or Tomato juice freeze until firm. Garlic Croutons heat cup Olive Oil in Skillet. Add 1 or 2 cloves garlic chopped Fry a few moments. Add via cups dry White bread cubes Fry till seasoned and lightly browned. R ;
