Winnipeg Free Press (Newspaper) - June 3, 1981, Winnipeg, Manitoba 44 Winnipeg free press. Wednesday june 3.1981 these cheese Blintzes have creamed cheese and cottage cheese filling. Fresh plums go into cheese strips if two of your favorite desserts Are hot Apple pie with Sharp Cheddar cheese and a Ripe Pear with a wedge of Camembert cheese you May just Plain fall in love with Plum cheese strips. They re Crisp and Flaky Cheddar cheese pastries filled with fresh Plum Puree and Brown sugar. They make a great dessert a Subtle though powerful appetizer try them with Plum spritzers a Glass of soda water or Champagne with Plum Puree or a fancy mid afternoon snack. Still with fresh plums in mind you May want to try three cheese Plum spread to use on crackers or celery Sticks. The three cheeses Are Cheddar Cream and Blue. Plum cheese strips 4 fresh plums cup Brown sugar packed cups sifted All purpose flour Teaspoon Salt cup shortening cup finely grated Sharp Cheddar cheese 14 cup milk pit and Dice plums into blender Jar or food processor process until smooth to measure 1 cup Puree. Combine with sugar in Saucepan bring to boil. Reduce heat and simmer 10 minutes stirring frequently and watching closely to avoid scorching. Cook until mixture is reduced to cup. Cool. Combine flour and Salt. Cut in Short ening until particles Are size of peas stir in cheese. Sprinkle with milk adding just enough to make a stiff dough. Divide dough in half. Shape each half into a rectangle and Roll 1 piece at a time on floured Board to a 5-by-12-Inch strip. Trim edges with fluted pastry wheel if desired. Transfer to a greased baking Sheet and spread 14 cup Plum mixture Lengthwise Down Centre of strip. Fold sides Over filling toward Centre leaving a space of about of an Inch open in Centre. Repeat with second strip. Bake below Centre of oven preheated to for 20 to 25 minutes or until pastry is Crisp and lightly browned. Slide off on to wire rack to Cool. When cold Cut each strip diagonally into 10 slices about 1 Inch wide. Yield 20 pieces. Three cheese Plum spread 2 fresh plums 1 package 8 ounces Cream cheese softened cup cold pack Cheddar cheese food cup Blue cheese 3 Tablespoons melted butter 2 Tablespoons toasted sesame seeds pit and finely chop plums to measure cup. Cream together cheeses and butter. Stir in plums and sesame seeds. Turn into serving dish and Sprinkle with additional sesame seeds if desired. Yield about cups. Here s their recipe for pudding and pie mix plus a recipe using the mix. Pudding and pie mix cups sugar 2% cups All purpose flour i Teaspoon Salt 1 cups instant non fat dry milk in a Large bowl Combine All ingredients. Mix Well. Put in a Large airtight Container. Label. Store in a Cool dry place. Use within 6 to 8 months. Yield about 9 cups of mix. Note if you prefer cornstarch pud dings substitute 2 cups cornstarch for flour. Chocolate Cream pie 1 baked pie crust cups pudding and pie mix cup sugar y4 cup Cocoa 2% cups milk divided 2 eggs Well beaten 1 Teaspoon Vanilla 3 Tablespoons butter or Margarine whipped Cream prepare pie crust. In a Small bowl Combine pudding and pie mix sugar and Cocoa until Well blended. In a heavy Saucepan Combine Cocoa mix Ture and 1 cup. Of the milk. Stir until smooth. Gradually add remaining 1% cups milk and Cook Over medium heat about 5 to 7 minutes stirring constantly until mixture boils and thickens. Remove from heat. Gradually add of hot mixture to the beaten eggs in a medium bowl. Mix Well. Blend egg mixture slowly into the hot mixture in Saucepan. Cook about 1 minute stirring constantly until pie filling just begins to boil. Remove from heat. Stir in Vanilla and butter or Margarine. Cool then pour into pie crust. Refrigerate 2 to 3 hours until firm. Serve with whipped Cream. Makes one 9-Inch single crust pie. For chocolate pudding increase milk to 3 cups. Stir half the hot mixture gradually into the beaten egg. Blend into the hot mix Ture in the Saucepan. Boll and stir 1 minute. Sprinkle with snipped Parsley. Yield 4 one cup Servings. Daphne s cheese Blintzes Pilling 1 Carton 500 g creamed or Low fat cottage cheese 2 cups 1 package 4 ounces Cream cheese softened it cup sugar 1 egg Yolk 1 Teaspoon Vanilla extract Teaspoon Salt crepes 1 cup milk 3 eggs cup Pancake mix 2 Tablespoons vegetable Oil Teaspoon Salt Vij cup butter or Margarine melted for filling in Small mixing bowl Combine All ingredients beat at medium Speed on electric mixer about 2 minutes or until smooth and Fluffy. Cover and chill. For crepes Combine All ingredients except butter or Margarine mix until Batter is fairly smooth. Let stand a few minutes to thicken. For each crepe pour about 2 Tablespoons Batter into hot lightly greased crepe pan or a 6 to 7-Inch Skillet. Immediately tilt pan to coat Bottom evenly with thin layer of Batter. Cook 45 to 60 seconds or until top looks dry turn. Cook other Side about 20 seconds. Stack crepes Between sheets of Wax paper. Preheat oven to spoon about 2 Tablespoons filling on to Centre of each crepe. Fold 2 sides Over filling fold up ends to form a Square. At this Point Blintzes May be tightly covered and stored up to 24 hours in fridge. When ready to serve Brush with melted butter and bake at about 30 minutes or until heated through Brush 2 Tablespoons butter or mar Garine on Bottom of 13-by-9-Inch Bak ing dish or Ovenproof Platter bake at about 15 minutes.
